Preheat oven to 500 degrees for 10 minutes.
Apply butter or 3 tablespoons olive oil to roast.
Rub salt or kosher salt and freshly ground pepper to roast.
Place the meat in a roasting pan and cook for 15 minutes at 500 degrees. (This will give a nice crust on the outside.) reduce the heat to 450 degrees for another 15-20 minutes. Slice into the meat to check for doneness, or use a cooking thermometer. (140-150 degrees is medium-rare.)
Allow roast to cool for 10 minutes before slicing.
