Ro's Vegetable Medley
Serves 4 to 6
- 3 Onions, Sliced
- 3 Med. Zucchini, Sliced 1/4 inch or cubed 1/2 inch pieces
- 2 Small or 1 Large Eggplant, cubed
- 6 Plum Tomatoes, sliced
- 2 Potatoes, sliced
- 1/2 lb. Carrots. Cut thin
- (Sauce) 1/2 CUP Olive Oil
- (Sauce) 1 Clove garlic, crushed
- (Sauce) 3/4 TSP. Salt
- (Sauce) 1/2 TSP. Each Oregano, Mint, Dill and Parsley
- (Sauce) 1 CAN Chopped Tomatoes, 16 oz.
1. Prepare vegetables and arrange mixed layers in 11x15 inch baking pan
2. Mix all sauce ingredients and pour over vegetables.
Bake covered at 400°F for 45 minutes, then uncover at 375°F for 30-45 minutes, or when served.
Grate cheese, such as Kefalotiri or Parmesan may be sprinkled on top during last 20 minutes or when served.
