Ro's Vegetable Medley
Serves 4 to 6
INGREDIENTS:
  • 3 Onions, Sliced
  • 3 Med. Zucchini, Sliced 1/4 inch or cubed 1/2 inch pieces
  • 2 Small or 1 Large Eggplant, cubed
  • 6 Plum Tomatoes, sliced
  • 2 Potatoes, sliced
  • 1/2 lb. Carrots. Cut thin
  • (Sauce) 1/2 CUP Olive Oil
  • (Sauce) 1 Clove garlic, crushed
  • (Sauce) 3/4 TSP. Salt
  • (Sauce) 1/2 TSP. Each Oregano, Mint, Dill and Parsley
  • (Sauce) 1 CAN Chopped Tomatoes, 16 oz.

Directions

1. Prepare vegetables and arrange mixed layers in 11x15 inch baking pan
2. Mix all sauce ingredients and pour over vegetables.
Bake covered at 400°F for 45 minutes, then uncover at 375°F for 30-45 minutes, or when served.
Grate cheese, such as Kefalotiri or Parmesan may be sprinkled on top during last 20 minutes or when served.
