Pumpkin Soup
Servies 4 to 6
INGREDIENTS:
  • 1/4 C butter
  • 1 chopped onion
  • 1 crushed garlic clove
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 3 C chicken broth
  • 1 3/4 Libby Canned Pumpkin
  • 1 C half & half
  • Dollop of sour cream and chives - optional

Directions

In a large saucepan, melt butter. Saute onion and garlic until soft. Add spices and cook 1 minute. Add chicken broth, boil gently uncovered for 15-20 minutes. Stir in pumpkin and half/half and cook for 5 minutes. Pour into blender and blend until creamy. Spoon sour cream and chives on top if desired.
